Quick Tip: Don’t Burn the ‘Q

A common mistake many backyard grillers make is to cover their chicken, pork or beef with sugar-laden barbecue sauces before they throw them on the grill. I can speak from years behind the grill, and maybe a little less with the smoker, that adding sauce any time before the last 5-10 minutes on the grill will produce less than ideal results. The sugar in the sauces tend to burn in the heat of the grill and, no, that black stuff doesn’t taste like caramel. My preference is to use a dry rub to season the meat before I lay it on the grill. Then, when the meat looks like it is 80+% done, add a thin coating of the sweet sauce. You can always add more once the heat is turned off. The heat remaining on the grill will cook the sauce on.

Latest Patriots Pick-ups

With the recent acquisitions of Albert Haynesworth from the Washington Redskins and Chad Ochocinco from the Cincinnati Bengals, Ooh…this is going to be an interesting year for the Patriots. The 6’6″ 335 lb. Haynesworth is a monster of a specimen but has had trouble with motivation and some off the field issues that make him the prime candidate for Bill Belichick to mold into yet another value-add to the team.The talented and sometimes outspoken Ochocinco has good career stats and may be yet another “problem child” project for Bill to take on. Not sure we’ve seen a time when we’ve had more than one project player in house at one time so this could be a challenge for coach and the players to maintain their focus on the Patriot way.

Heating Things Up

The Jerk CafeOn a recent trip to the Cape, my family and I stopped by a Caribbean restaurant in South Yarmouth called The Jerk Cafe. Everything we had there was great. My wife and I had the jerk chicken and pork while my daughter had the ribs. Very tend and nicely spiced in jerk seasoning made by the chef. The seasoning is available on the restaurant’s website.

Quick Tip: Adding a little something to your Coffee

I am usually a cream and sugar kind of guy when it comes to my coffee. Recently, I discovered that I add just a touch of cinnamon to the bottom of the filter before brewing, I get a nice accent on flavor that isn’t overwhelming. Be careful, though, it doesn’t take much before the spice overpowers them coffee.
